Place of Employment

Yesterday I enjoyed a very peaceful lunch out by the creek.

I take for granted that I work at the most beautiful place! 

I found a pile of rocks in the shade to set up lunch on. I enjoyed the sound of the water flowing through the creek. For some reason rushing water always makes me feel so peaceful.

Another Summer Salad. I could eat these all year! Spinach, Blueberries, Strawberries, Goat Cheese, Chicken, and a little Balsamic Vinegar.

Such a fun lunch hour 🙂

After work last night I taught KB and was so exhausted that I never really ate dinner 🙁 So when I woke up this morning I was STARVED! I knew I would be eating EGGS!

Breakfast

I made a egg white scramble. I mixed together 3 egg whites, 1 cup baby spinach, chopped tomato, chopped onion, and some goat cheese.

I added the cooked mixture into a ww tortilla and topped with a little avocado.

The tastiest breakfast burrito you shall ever eat! Go make one right now 🙂

Tonight I am teaching KB for someone so I will be out all day!! It’s ok because today is my FRIDAY! I can’t wait for my day off tomorrow, I have so many fun things planned 🙂
