Good evening lovelies 🙂
I am super tired. From the beginning of the day this girl has been dragging a bit. It was actually one of those days where I thought to myself, “Can I go back to bed and start all over again?â€. Have you had one of those days? Well thank goodness I managed to push through and had some mighty good eats!
Mid Morning Snack:
Puffins + Greek Yogurt + Honey
Lunch:
Summer Salad: strawberries, mixed greens, almonds, cashews, and goat cheese.
Raw Veggies: Carrots, zucchini, and yellow squash.
Hummus (for the veggies and dressing) and cherries!
I also snacked on a few of my friends Triscuts, I knew I need some bread!
Pre-Workout Snack
mmmmm! Love these 🙂 I also had an apple with it!
After work I had Pilates (no run, we ran out of time). Skinny Bride showed up and I am happy to report that she is maintaining her weight and slowly dropping the pounds. She is really working on her calorie intake and trying to keep up her CLEAN eating!!!
Ignore my Crazy HAIR, it was a rough day!
On my drive home I was inspired to make some delicious tacos!
The inspirations came from a peach I had in the fridge 🙂 I made a yummy peach and cilantro salsa.
Ingredients:
- 1 chopped fresh peach
- handful of chopped cilantro
- squeeze of fresh lime juice
- 1/2 c black beans
- 1/2 c fresh corn
- 1 diced tomato
- dash of salt
I layered my whole wheat tortilla with ground turkey, salsa, mixed greens, light cheddar cheese, and then topped off with one tbsp of Greek Yogurt.
It was the perfect summer dinner!
