Happy MLK Day! I have been celebrating the Holiday with all kinds of fun stuff!
Breakfast
My morning started off with a light brunch with my Dad and Step Mom. I just love that they moved so close, so I can see them more often 🙂
OJ
One heck of a bowl of delicious oats.
I left around 11:30 and had a few errands (grocery shopping) with Hubby to run. I love that he had the day off too. It’s always a lot more fun running errands with your best friend.
Lunch
I had to be at Susie’s at 2pm, so I grabbed a Veggie Bowl at Chipotle and got my butt over to her house.
So why did I have to be at Susie’s at 2pm, because she was giving me my very first tamale lesson! I figure all Mexicans should know how to make Tamales 😉 We had to get started early, because takes about 3-4 hours!
We picked up all the wonderful ingredients at the Ranch Market here in town. Masa, peppers, cilantro, tomatillos, corn husks, and chicken.
Susie has PROFESSIONAL pots!
The chili for the insides was a lot easier to make then I thought. Just chicken broth, cilantro, tomatillos and peppers.
All mixed together with the shredded chicken breasts.
The hardest part was spreading the Masa on the corn husks. I think I finally got it down 🙂
While we slaved in the kitchen, Bosco got some love from Susies kiddos.
Time to stuff the tamales 🙂
Now into the pot.
Steam for 1.5 hours (I took off to Kettle Bell class) and…
THA-DA!!!! Homemade chicken and chilies tamales!! They were so moist and just the right amount of kick 🙂 We made over 5 DOZEN!!!
Susie also made beans and rice while I went to Kettle Bells.
Then we enjoyed a little sliver of Red Velvet Cheesecake 🙂 You know me and my anti-cake love, but I think red velvet cake and carrot cake are now my two favorites!
Now it’s time to get my self ready for the week and get my reading in for the day!

Aw, this was a really nice post. Spending some time and actual effort to make a good article… but what can I say… I hesitate a lot and don’t seem to get nearly anything done.
