Sunday nights in our household are all about food, friends and football!! I have been trying to get creative with meals that feed large groups that are “healthified”.
Tonight I made a Taco Casserole and it was DEVOURED!!!!!!
Turkey Taco Casserole
Ingredients:
1 chopped onion
3 chopped tomatoes
2 large chopped tomatoes
1/2 cups cooked whole wheat penne pasta
2 cups low fat Mexican cheese blend (or less)
1 1/2 pounds of ground turkey
1 cup salsa
2 tbsp taco seasoning (I used McCormick’s)
Directions:
Preheat oven to 350 degrees. In a large skillet sauté onions in 2 tbsp of olive oil until softened.
Add in ground turkey and cook until brown.
Add in tomatoes and bell peppers cook until softened and then add in salsa.
Place cooked whole wheat pasta in a baking dish.
Top pasta with meat and veggie mixture and mix together.
Then top with cheese.
Bake in the oven for 12-15 minutes and ENJOY!!!!!
Tonight we are pushing football aside and watching the Cardinals!!! Only one more game till the World Series 🙂
