Hey friends, miss me 😉
Yesterday I could barely keep my eyes open at work. All I wanted to do was go to SLEEP! Not sure why I was so tired, but I decided to stay in!! Part of me learning to SLOW down.
As soon as I got home I threw my PJs on and got cozy with my second love Bosco. Coach M had an away game 🙁 I missed our Thursday night group, but it was a must needed time of rest.
Dinner
I was going to make tofu tacos (thanks for all the recipe ideas) , but then remembered I still had some leftover pasta I needed to eat. I HATE throwing out food 🙂
Since I was being lazy I just ate straight out of the casserole dish.
Then I retired to my room and read + watched Friends + worked on my scarf . Did you guys know I like to knit? I really want to learn how to crochet!
It was the perfect night. I think I fell asleep before 9pm!!
This morning I woke up and ran with my friend Jackie. We both needed some extra rest so we met up at 7am. Missed my Friday Fun Run friends, I am sure your run rocked!! We did 6 grueling miles. I don’t know what it was about this morning, but our run took a lot of out US! We were so happy to be done 🙂 My IT band is really sore!

The best part about meeting at Panera for a run, is finishing at Panera!!! I ordered the Coffee and Power Breakfast Sandwich.

Fit Friday Baking
Since I make yummy treats for my co-workers and guests on Friday mornings I thought I should do a series called “Fit Friday Bakingâ€. Healthy treats for you and your friends 🙂 This week I was inspired by Jenna’s Loaded Oatmeal Cookies.
Oatmeal Cookies (Inspired by Eat Live Run)
makes about 2 1/2 dozen cookies
1 3/4 cup old fashioned oats
3/4 cup whole wheat pastry flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup packed brown sugar
1 egg or 1 banana
1 stick earth balance softened
2 tsp vanilla extract
1/2 cup carob ships
1/3 cup dried cranberries
Preheat the oven to 375.
In a medium sized bowl, stir together the oats, flour, salt, baking soda, cinnamon, cranberries and chocolate chips. Set aside.
Cream together the brown sugar and butter until light and fluffy. Add the egg or banana and vanilla and continue to beat until smooth. Add the dry ingredients and beat only until combined.
Scoop out whopping tablespoons of dough on a lined baking sheet. Flatten a little with your fingers (works best if your fingers are wet so the dough won’t stick as much). Bake for 10 minutes, or until golden brown.
