HAPPY MONDAY!!!
I have exciting news. I can finally respond to all of your beautiful comments directly in the comment section! I have been working on this for awhile now and I finally asked Hubby to help me and of course being the pro (hello he is a web designer) he fixed it in like two seconds!! Now that Hubby is done coaching we are making some fun changes to NHS, so stay tuned.
BREAKFAST
This morning I got creative in the kitchen and decided to make a breakfast quesadilla!!
I used to La Tortilla Factory Whole Wheat Tortillas and stuffed them with the following:
- TJ’s Refried Black Beans
- 2 eggs Cooked Sunny Side Up
- Leftover Grilled Zucchini
- 1/2 cup of Sharp Cheddar
I put a little Earth Balance Butter on each side of the tortilla and grilled it for about 3 minutes on each side on low, in a pan on the stove. I then topped it off with a spoonful of Fage and a 1/4 of an avocado.
Real Days of Real Food Update:
I am having a lot of fun researching all about REAL food and getting some great ideas of recipes and alternatives to some of our snacks. I am going to purchase a few new cook books and Pollack’s "Food Rules".
The one thing I am stuck on is Hubby’s ADDICTION to Crystal Light. He doesn’t like the taste of water so instead absorbing a million calories from Coke he switched to Crystal Light. So of course Crystal light is filled with preservatives and fake sugar and he really wants to kick the habit, I can’t find an alternative out there that is all natural. PLEASE HELP?!

I LOVE my Cooking Light Magazine and I have made almost everything in my Cooking Light Slow Cooker Cook Book and loved it all 🙂
