I am back :)! It’s been so nice being on a mini blogging hiatus, I missed you all and can’t wait to catch up on all that has been going on in the blog world.
We had a wonderful week off camping with family and friends. Visit my article at Breathe Magazine to read about my Healthy and Active Vacation!
After we returned home last Sunday, from camping in tents, we headed right back out to Family Camp at Forest Home (where Hubby and I work). We stayed in a deluxe cabin tucked away in the mountains. This is one of the wonderful benefits of my new job. Hubby and I get to go to two camp experiences for free each year!!!
CAMPING EATS
Breakfast
For breakfast every morning I enjoyed the oatmeal bar. There were a lot of other unhealthy choices, sausage, waffles, hash browns, cinnamon rolls… it was hard, but my breakfast was yummy too! I always had fruit, oats, and eggs.
The chef at our camp is very conscious about peoples diets, instead of peanut butter (lots of peanut allergies) he had sunflower butter. It tasted ok, I like almond butter better, but it did the trick.
One of the mornings we went out on an early morning hike and had breakfast on inspiration point! This was one of my highlights of the week 🙂 After the long climb we enjoyed the most beautiful view!
They served seven grain pancakes, potatoes, bacon, and more! The boysenberry syrup was homemade!

Lunch
For lunch everyday we always had a salad bar, I sure got my veggies in for the week. I also signed up for the Health Wise option at camp, which is healthier alternatives to all the meals that would be cooked for the week!! Have you ever heard of such a thing?!
It was so nice all I had to do was stick this card out at every meal and they would bring me the Health Wise choice on the menu.
Here our some of the wonderful lunches I enjoyed…
A delicious turkey wrap filled with sprouts and veggies.
Gluten free pasta with roasted peppers and chicken.
We had a BBQ on Wednesday, I had a double black bean burger, with a ton of veggies and beans.
Our last lunch sooooo good, but too filling for me. Most the days I was satisfied, but on this day I was STUFFED!!! I had a salad, chicken tortilla soup, and a chicken burrito with the most tasty home made salsa.
Dinner
Our dinners were so FANCY! The Chef blew my expectations out of the water! We had two Adult late night dinners without kids. All of our meals were plated and served by 15 kind college staff.
I didn’t take pictures of all of my dinners, but here are a few of my favorites….
Grilled eggplant stuffed with roasted red peppers, served with green beans and brown rice.
On the fancy nights our tables were beautifully placed.
I loved the way they plated all of our dinners, it almost felt like we were at on a cruise ship and not at camp! The presentation was marvelous!
One evening I was adventurous! I normally don’t eat red meat, but I had never tried Buffalo before so I had to give it a try. It was actually very good and I could have had seconds on the caramelized carrots!!!

Below was my favorite dessert. Strawberry Sorbet with a white/dark chocolate sauce of amazingness!!!!
One of the evenings we had some of the best sweet potato fries I have ever tasted!!!! It was served with roasted chicken and sweet corn.
For the first time I even tried Chicken Fried Tofu, WOW, it was heavenly! I had the chef tell me his secret ingredient, I can’t wait to try it out at home. This meal brought new meaning to “southern cookingâ€.
All of our meals were so balanced and filling. It helped keep me away from this monster!!! The Adventure Mountain Sundae, 15 scoops of homemade ice-cream, chocolate chip cookies, whip cream, fudge, and more!!
How did I keep active while I was away from home?!!! More to come……..
