Today was nothing short of an adventure!!! I honestly can’t believe how much I accomplished today. I am going to love having week days off. After breakfast I managed to do a bit of cleaning (deep cleaning will happen tomorrow morning) and then hit up Power Hour at Innerevolution Yoga. I love LOVE love being able to do Hot Yoga in the middle of the day. It felt AMAZING! I also managed to get a lot planned for our REUNION!
LUNCH
I ran a couple other errands and then realized I was starved. So I swung by one of the “Healthier†fast food joints, Rubios, and grabbed a grilled Mahi Mahi taco as well as a grilled Salmon taco. YUM YUM. I love how fresh their food is.
Then I took a trip to Costco. Have you been to Costco on week day?? OH MY it is so much nicer then on a weekend. I was in and out in less then an hour! Then I ran off to teach KB.
DINNER
CP Jr. came out to play today in the kitchen. I made some killer Honey Lentils!
In the Pot:
- 1 1/2 cups of lentils
- 3 cups water(should have use vegetable broth)
- 1/2 cup shredded carrot
- 1/4 cup honey
- 1 tbsp dried mustard
- 1 can drained and rinsed garbanzo beans
- pinch of sea salt
- on low for about 6 hours.
- (you could add red onions too)
They smelled so good!!
Hubby had to quickly make our dinner to-go. I decided to throw the lentil mixture on some WW bread and make it a sammie. On the other piece of bread I put some cream cheese.
I will be making another for lunch tomorrow, pure heaven!

We had our Thursday Night Group tonight and we went over the first chapter of Wild at Heart. I really enjoyed it 🙂 I think I am going to learn a lot from both of the books we are covering and the conversation is always so fun!

****BY the way, thank you to you all for being so AMAZING. I am just overwhelmed daily how this little blog has inspired so many of you. When I get emails about how people have made big life changes because of NHS my heart melts. God is GOOD!
