Pasta primavera is an Italian-American dish that consists of pasta and fresh vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves! This is the perfect spring/summer pasta dinner!
My meat of choice was pancetta , I think Giada De Laurentiis would approve 😉
Ingredients:
Head of Broccoli
1/4 cup of chopped Green Onions
1 package sliced mushrooms
1/2 cup pancetta
1-2 cloves diced garlic (I love garlic so I added 2)
1 cup cherry tomatoes
Bag of Whole Wheat Penne Pasta cooked
Directions:
First cook pancetta in a pan. Then remove pancetta and add all veggies except tomatoes back to the pan sprinkle with a little salt and pepper and steam for about 5-7 minutes. While veggies cook, put tomatoes in the oven for 5 minutes at 350 degrees, this will create the best flavor!
After tomatoes are done throw them into the pan with the veggies and add a little EVOO. Then toss the veggies, pancetta, and pasta together in a bowl. Top with fresh Goat Cheese or Parmesan Cheese if you would like.
Veggies never tasted this good!
There is something about the simplicity of this pasta that I appreciate!
