Tonight’s dish was inspired by my dinner at Olitas in Santa Cruz. I had bought these Mahi Mahi filets awhile back and have been waiting for the right time to make them.
The Rub:
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon kosher salt
- 1/4 tablespoon ground cinnamon
- 1/2 tablespoon dill seed
- 1/2 tablespoon ground black pepper
- A little soy sauce
To-do:
Throw everything in a bowl and mix.
Throw in the the Mahi Mahi
Toss on the grill..
Grill for about 7-10 minutes
While the fish cooked I made the filling. This is the easiest and freshest salsa you will ever make!
Ingredients
- 1 Avocado
- Cilantro
- Chopped Fresh Pineapple
- Pinch of Sea Salt
- Lime Juice
- 1 diced tomato
To-do:
Throw together in a bowl and mix it up!
I also had some shredded green cabbage in my taco I got from F&E for only .98 !
I also added in some black beans.
Can you say yum!
Added the cabbage and a little Fage, all in a ww tortilla.
Served with my favorite chips!

I was going to go to hot yoga tonight, but decided staying home and catching up on emails and chillaxing was a way better choice.
SO EXCITED…
I get to sleep in tomorrow!!! Well in until 6am 😉
