Good evening friends I am happy to report that I finally created a Facebook fan page for NHerShoes!!! This way I can keep my personal Facebook page a bit separate from the world. Who am I kidding I have a blog, how much more out there can I be!! ๐ Feel free to like it!
Despite the fact that I really just wanted to stay in my PJ’s another day and watch "Friends", I ended up getting a lot done today! After my 5 mile run with Susie I came home and made the best SLOPPY JOES EVER, Hubby adored them.
TEX MEX Sloppy Joes
-adapted from Cleaning Eating Magazine
(Because Hubby was born in Texas and I am half Mexican ๐ )
Ingredients:
1b of Ground Turkey Meat
1 cup of chicken stock
1 red bell pepper diced
1 cup frozen corn
1 green bell pepper diced
1-2 medium tomato diced
1 red onion diced into ity bity pieces
3 tbsp tomato paste
1 tbsp sea salt
3 tsp Chili Powder
1 tbsp garlic powder
1/2 cup light cheese (whatever you have on hand)
Shredded Cabbage (optional)
1 tbsp soy sauce
1 tbsp of whole wheat flour
Directions:
Brown the turkey meat for about 4-5 minutes. While the meat was cooking I used my Slap Chop to dice up all my veggies. Haven’t used this in forever! Thinking of getting a food processor..anyone want to donate me there’s??
Then add bell pepper and onions and cook for another 2-3 minutes.
Next add in corn, tomatoes, spices, soy sauce, stock and tomato paste. Stir for about 2 minutes and then cover and simmer for 20 minutes. After it has been simmering for about 15 minutes add about 1-2 tbsp of whole wheat flour to thicken it up. The cook for 5 minutes and your done! If you let it sit for a couple minutes before serving it will thicken up even more.
On the side I made home made baked fries. Just a little EVOO and Sea Salt, and into the oven at 450 for 20 minutes.
I made two variations of a Sloppy Joes tonight. Mine was a bowl of the Tex Mex mix on top of the french fries. I added a little cheese and shredded cabbage for crunch! I think a little Greek Yogurt on top would have been perfect!
Loved the texture! It’s a lot like Chili, but sweeter.
Hubby’s was a little more traditional. I wish we just had homemade whole wheat buns.
I did toast his bread and added a little cheese.
Better then any MANWICH I have ever had ๐
Time to do a little reading and then hit the hay.
