You might think this combination sounds weird, but when Natalie told me she was making these for her Hubby I just knew I had to make them for mine! Best part is I had all the ingredients on hand.
Peanut Butter Bacon Cookies

*makes approximately 20 cookies
Ingredients:
-1 cup smooth peanut butter
-1/2 cup brown sugar
-1/2 cup granulated sugar
-1 egg
-1 tsp baking soda
-6 slices of bacon, cooked, cooled, and diced
Directions:
1. In a skillet over medium high heat, fry bacon until cooked through. Allow to cool and then dice into small pieces. Set aside.
2. Preheat oven to 350F. Grease two baking sheets and set aside. In a mixing bowl, combine peanut butter and sugars until well mixed. Add egg and baking soda, mixing for another two minutes. Fold in bacon, reserving a small handful of pieces for topping.
3. Roll dough into small balls and roll in granulated sugar. Using a fork, create a criss-cross pattern on each cookie. Top each cookie with a few reserved bacon pieces. Place cookies on prepared baking sheets with 2-3 inches between (they spread a bit).
4. Bake for 10 minutes, until lightly browned. Allow to cool on a baking sheet.
I don’t why I have a new obsession with BACON!!! It all started at the Foodbuzz Fest!
Oops I forgot to put the dough 2 inches apart!!! lol
I made a couple of them into hearts for the Hubby 🙂
I had some of the edges…let’s just say you have to make these if you want to try the best cookie I EVER ate!!! I am a sucker for sweet + salty treats 🙂
I am sure my co-workers are going to drool over these 🙂
After I finished the cookies, I prepped all the ingredients for my slow cooker Apple Butter. I will be posting the recipe this week.
Graciously my friend Susie invited me over for dinner (thank GOD Hubby comes home tonight) so I wouldn’t have to make dinner for one 🙂 Off I go!
